We are in one of my favorite times of the year.  It is harvest time.  All the wonderful fresh vegetables are coming in.

I have been freezing and canning  for several weeks now.  I came across this recipe in my family’s old recipe box and just had to try it.  Everyone has liked it, even kids.  It is a great way to get the kids to eat those delicious yellow veggies.

Aunt Nellie’s Baked Squash

Total Time: 1 hour, 20 minutes

Yield: 1 casserole

Aunt Nellie’s Baked Squash


  • 3 lb yellow summer squash
  • 1/2 c chopped onion
  • 1/2 c cracker meal or bread crumbs
  • 1/2 tsp black pepper (salt and pepper may be increased to suit taste)
  • 2 eggs
  • 1 stick butter
  • 1 T sugar
  • 1 tsp salt


  1. Wash and cut squash
  2. Boil until tender, drain thoroughly, then mash
  3. Add all ingredients, except 1/2 of the butter and cracker meal-bread crumbs, to squash
  4. Melt remaining butter
  5. Pour mixture in baking dish
  6. spread melted butter over the top
  7. sprinkle with bread crumbs-cracker meal
  8. Bake in a 375 degree oven for about 1 hour or until brown on top
